Expert mode

For expert mode, press D, D, B, C, D then Select at the options screen.

Fight as Duku or Shorko

To fight as Duku or Shorko, highlight the following fighters at the character selection screen for three seconds before moving to the next fighter: Billy, Marian, Chung Fu, Jimmy. The word "Bingo" will confirm the code has worked.

Opponent select

For an opponent select option, select one-player mode, then enter the options screen and change all options to a different value. Now, change all the options back to their original settings. An opponent will already have been selected by the CPU on the character selection screen. Select a character, then move the pointer to select your opponent.
